Drawing from Chinese culinary history and a recent renaissance of epicurean magnitude in China, George Chen opens fine dining concept Eight Tables on the second level of China Live. Drawing inspiration from shifan tsui (“private chateau cuisine”), the experience is like visiting a private home for a banquet prepared by a top chef. The $225 10-course tasting menu presents Chinese fine dining in modern interpretations through a San Francisco lens. For example, opening dishes may include velvet chicken with Burgundy truffles and matsutake mushrooms with veal soya jus, and red braised pork belly with tea quail egg and yuba knots.
