In its scale and precision, the multi-station food hall China Live is impressive in its own right, but when the alternative-timeline Shanghai cocktail lounge Cold Drinks followed it, we began to grasp that the last piece of the puzzle, Eight Tables, was going to make an even deeper impression. Well, George Chen and co. pulled it off, from the discreet decor to the wine list to the jiu gong ge, or “nine essential flavors of Chinese cuisine.” The Michelin tasters are notoriously rigid regarding which cuisines they favor, but if any contemporary Chinese restaurant can win their favor, it would be Eight Tables.
